As a signature delicacy of Hubei—known as China’s land of fish and rice—Wuchang fish has long been cherished for its rich flavor and tender texture. It rose to national fame thanks to a line from a poem by Chairman Mao Zedong: “Just tasted the waters of Changsha, and now I dine on the fish of Wuchang.” Its history, however, dates back some 1,700 years ago to the Three Kingdoms period (220–280 AD), when Sun Quan, ruler of the Wu State, served it in Wuchang (present-day Ezhou) as a reward for his meritorious officials. Thanks to the enduring passion of Wuhan locals for the fish, it has become a unique cultural symbol of the city. Chu Wei Tang, a Wuhan-based food brand, began promoting authentic Hubei flavors nationwide in 2002. Its preparation technique for Wuchang fish is officially listed as part of Hubei’s Intangible Cultural Heritage.
